Our precision sharpening is done by hand. All of it. There is no machine that can match the care and delicacy of an edge applied by hand. In fact, some blades, like straight razors, will no doubt be destroyed instantly with contact to a motorized sharpener. The delicate and experienced hand of a cutler is required. We rather like playing in the mud when the opportunity affords us and we’d be pleased to get our hands dirty for you. Using a series of flat stones, slips and strops edges are brought to their absolute keenest by hand. All of them.

Culinary Knife Sharpening
A plain bevel edge is applied by hand using synthetic water stones on a EP Edge Pro platform. The existing bevel angle is kept and minor chips are removed. These blades are finished to 2000x. All finish work is done by hand and inspected to assure a sturdy & precise edge for your pros tools on the line or workhorses prepping in back. A kitchen with sharp tools is a happy, efficient kitchen.
